Grilled Shrimp with Basil, Garlic and Tomatoes
1 lb shrimp, peeled, washed, patted dry (reserve shells*)
1 tsp salt
2 tsp hot sauce
1/4 C olive oil
1/3 C fresh basil, minced
5 cloves garlic, minced
12 grape tomatoes, sliced thin, or 1/2 ripe tomato, 1/4" dice
Toss shrimp in oil, salt, and hot sauce. Grill 2 min per side on hot preheated grill. Immediately toss with the basil, tomatoes and garlic.

*Keep all shrimp shells in a bag in the freezer for use in making Shrimp Broth.
