Smoked Salmon Pizza
I can't stop buying those $5.00/lb pouches of smoked salmon trimmings from Ducktrap Farms....
Smoked Salmon Pizza
See Pizza Basics for dough recipe, procedure, etc.
Base:
1/2 vidalia onion sliced thin
3 med boiling potatoes, boiled in salted water until barely fork tender, sliced thin
1-1/2 T dried dill
2 cloves garlic, minced
olive oil
Toppings:
2 oz parmeggiano reggiano, shredded
2 oz sharp provolone, shaved
6 oz smoked salmon
zest of 1 lemon
1 oz plain goat cheese, crumbled
Garnish
1 scallion, sliced in threads
1 T fresh oregano, minced
Spread olive oil on pizza shell, then potatoes, onions, garlic and dill. Bake 10 min. on a preheated stone in a preheated 450º oven.
Remove from oven and add the toppings, in this order: parmesan, provolone, salmon, zest, goat cheese.
Return to the oven, reduce heat to 400º, bake for 10 min. Crust should be turning brown, crisp.
Brush edges with a little olive oil, scatter on a garnish of chopped oregano and scallion threads. Cut into 8 slices.

Stephen - I LOVE your blog and especially your amazing combinations of pizza toppings. That "smoked salmon trimmings" deal from Duck Trap sounds wonderful, but I don't see it on their website - do you have the "express order number" for it so I can add it to my order?
I've lately been buying a 1lb pack of "variety" smoked salmon from Costco that isn't bad at all. It is 4 pieces of differently spiced salmon, such as cajun and lemon-pepper. At Costco it is $6, from what I recall, which isn't too bad of a deal. :-)
