Tuscan Grilled Chicken Sandwich
We had another sunset beach picnic with a group of friends, and our contribution was a simple Tuscan-inspired grilled chicken sandwich. Chicken breasts, marinated in vinaigrette and herbs and grilled, then sliced and combined with tomato, basil and fresh mozzarella on slices of rustic bread. What could go wrong with this?
2 boneless skinless chicken breasts
1/4 C minced oregano
1/4 C olive oil
3 T balsamic vinegar
1/2 tsp salt
1/2 tsp hot sauce
fresh mozzarella, sliced
basil leaves
tomato slices
bread for sandwiches
mayonnaise (optional)

Cut slashes across both sides of the chicken breasts. Mix the oil, vinegar, salt, hot sauce and oregano. Marinate the chicken in the oil and vinegar mixture for 30 - 60 min. Grill on medium hot grill about 10 minutes on a side. Allow to cool to room temperature.
Slice chicken and place on a slice of bread. Top with the basil leaves, cheese, tomato and optional mayonnaise.

Catching your own sea bass, and sunset beach picnics? Sign me up! The sandwiches sound fantastic, even more so because of the context in which they were eaten. I know that you avoid black pepper, but I'm just curious what kind of hot sauce you generally use?

Hi Michele...thanks for stopping by...yes, there's a reason the Maine slogan is "The Way Life Should Be" .... the answer to the hot sauce question is...either Texas Pete or Goya...
