Sweet Onion and Cucumber Salad
Over the last few years Vidalia onions have become regularly available in our markets here in the North, and we've become quite addicted to them in our house, in salads or just sliced raw and paired with cheese and a good crusty bread. This salad, which is simple and quick to make, is refreshing and a nice change of pace. It goes with almost anything.
Sweet Onion and Cucumber Salad
Seedless hothouse cucumber, sliced thin
Vidalia or other sweet onion, sliced thin
Salt
Sugar
Rice vinegar
Olive oil
Spread the cucumber slices in one layer on a cutting board or other surface. Sprinkle liberally with salt. Allow to sit for 20 - 30 minutes, then gather up the slices in a clean towel or paper towel and squeeze as much liquid as possible from the cucumbers.
Meanwhile, mix a sugar water solution of 1/2 tsp sugar per cup of cold water. Soak the onion slices in the sugar water for 15 - 30 minutes and drain well. Pat dry with a paper towel.
Mix the vinegar and oil in a 1:5 solution and whisk to emulsify. Arrange the onions on the plate, then top with cucumbers and drizzle sparingly with the dressing mixture.

Thank you for sharing this. Was at a restaurant in Saratoga Springs New York this past weekend and they had a sweet cucumber/onion salad as a side dish for their fried chicken meals . The salad was delicious, cornbread and biscuits mouth watering and great whipped potatoes, unfortunately we visited for their famous fried chicken and we left most of it on the plate. The salad saved the day . So am looking forward to making this with my own fried chicken .
