Roasted Cauliflower with Garam Masala
This simple side dish is extremely popular in our house. Not only is the subtle spice of the garam masala a nice change of pace, but also we love the way the roasting transforms the crisp, crunchy raw cauliflower into an almost buttery melt-in-your mouth treat.
Did I mention that, in addition to being quick and easy, this dish is low carb, low calorie, low fat and high fiber? What more could you want? I particularly like this roasted cauliflower as a side to chicken, and chilled leftovers can serve as a low-impact snack for people following a low calorie or low carb diet. My other favorite use for leftover cauliflower prepared this way is to use it to perk up an otherwise ordinary salad.
Roasted Cauliflower with Garam Masala
Serves 6
Ingredients
- 1/2 head cauliflower, trimmed and separated into flowerets, about 4 cups
- 1 tablespoon olive oil
- 2 tablespoons garam masala (see note)
- Salt and pepper to taste
- 1 scallion, white and light green parts only, sliced (for optional garnish)
Method
1. Preheat the oven to 450º.
2. Place the cauliflower in a flat-bottomed ovenproof dish (large enough to hold the cauliflower in one uncrowded layer), add the olive oil and toss to coat the cauliflower pieces.
3. Roast uncovered for 25 - 30 minutes, until the cauliflower pieces just start to brown.
4. Scatter on the garam masala and toss gently. Correct the seasoning.

Garam masala is a spice mixture typical to Indian cuisine. Recipes for it differ slightly by their region of origin. Premixed garam masala may be purchased at Indian groceries or sometimes in the "Ethnic" section of large supermarkets, or you can make your own:

Ingredients
3 tablespoons cardomom seeds
3" cinnamon stick
1 1/2 teaspoons cumin seeds
1/2 teaspoon black peppercorns
1/2 teaspoon cloves
1/4 of a nutmeg
Method
Grind spices together until pulverized. Store in a tightly closed container.
