In the Kitchen: Chinese-Style Steaming Rack Alternative
In Chinese kitchens you'll always see these nice bamboo steaming racks.
They can steam several layers of food when set over a wok full of boiling water (I don't have a wok so here you see mine sitting on top of a Dutch oven.)
These are useful not only for steaming vegetables, which we can do in metal steamers, but also for steaming food in sauce. To do that you just put the food on a plate with the sauce and place the plate in the basket.
In western kitchens there's no setup quite like the Chinese steamer rack for steaming foods in sauce. But that doesn't mean you can't do it.
The ring from a ring-mold, or just a pie plate turned upsidedown, is placed in a broad pan. This supports the plate of food so we can steam dishes in the Chinese manner (covered, of course) without adding another piece of equipment to the kitchen.
DELICIOUS, QUICK AND EASY!
Low carb, low sugar, low cal. As it cooks, it presents as poetry on a plate. My single left over portion my niece took home for lunch the next day. Good for her :) - ): sad for me! I guess I better get cooking.
